Effective Jul 25, 2010 Works like a charm. I had very nice knives that I had been using for 3 years and hadn't yet resharpened, and this completely did the trick! You can even see how each stage works by looking at the edge in between each stage. I purchased this upon the recommendation of my father, who has owned two to three varieties of these over the years, and he currently has the 3-stage as well. Money well spent, and if for some reason you're dissatisfied Amazon's return policy is so amazing you don't really have much to lose.
Wow! that's a knife sharpener. Jul 24, 2010 I have bought other Chef's Choice Knife Sharpeners and they have always done a good job of sharpening my knives but I have to tell you this knife sharpener really sharpens my knives dangerously sharp. When I got the knife the Chef's Choice 120 Diamond Hone, I read the instructions, but I couldn't get a picture in my mind's eye on how to correctly sharpen my knife and because of this, the sharpener produced a mediocre edge. I thought that after what I paid for this thing it should do something more than produce a so-so edge. After rereading the sharpening instructions I got a better idea about how to hone a good edge. All I can say (after following the instructions carefully) This knife sharpener will produce a near razor edge consistently.
Highly recommend Jul 24, 2010 Works great! Our knives were HORRIBLY dull, and required multiple passes on stage 1. Once we figured this out, we ended up with a drawer full of super sharp knives.
Excellent Knife Sharpener Jun 09, 2010 This knife sharpener is easy to use after you get the hang of it. The directions are not detailed enough for a novice like me to read, especially since I have a slight phobia about following directions correctly! I'm glad I bought the best knife sharpener I could afford. Highly recommended for beginners as well as accomplished cooks. We eat a lot of fresh veggies and salads, and I got tired of dull knives cutting me. Glad I bought this!
A great product! Jun 05, 2010 A great product! My knives hadn't been sharpened in over 10 years, and now they are like new again. It was very easy to use. Only down side is that it puts minor scratches on the knife blade (caused by pulling the blade through the sharpener). I highly recommend this product.
